Kale Salad

We tried a new kale recipe yesterday. I’m pretty sure I’ve only ever steamed kale in the past, so it was definitely time to enjoy it another way. I did my usual google search when looking for a new recipe – “paleo + {recipe of interest}” and read through a bunch. I didn’t end up using any directly, just winged it. It would make a great summer side dish.IMG_5406Chop one bunch of kale, your choice to remove the ribs or not (I left on for a little crunch, but not everyone likes them as they are rather tough). Or, to make it even easier, grab a bag of pre-chopped kale from Trader Joe’s. Mix together your preferred ratio of lemon juice and olive oil. We used one large lemon and a couple tablespoons of olive oil. Add chopped garlic, salt, and pepper and whisk together. Pour over kale and let sit to marinate while you cook the rest of your meal. We had it with salmon and mushrooms sautéed in garlic ghee.
