Broiled Zucchini

I’m in a total vegetable rut. We eat either salad, spinach, roasted Brussels or carrots, spaghetti squash, or cauliflower fauxtatoes. It’s a decent mix of veggies, but considering most any meal we eat at home is protein + veggie + veggie, it’s getting a little old. I’ve decided to start branching out and trying some new recipes. Maybe these will get you motivated to try some new ones, as well.

Friday night we had salmon over baby spinach sautéed in butter and broiled zucchini. I always love Michelle’s recipes and this was no different. It also was easy and quick, huge plus. I sliced them a little too thin, but they were still delicious. IMG_5074
